The latest evolution at the market follows Rak Thai relocating with a new concept and Chewie Bites Bakery and Boba Shop opening this past fall.

Pinktail Poke Closes at Grand Rapids Downtown Market

Now the Downtown Market is saying goodbye to Pinktail Poke, which opened in early 2020. The restaurant served "chef-inspired, sustainable, fresh never-frozen" dishes with poke sourced from sister business, Fish Lads.

New Sub Shop Opening at Grand Rapids Downtown Market

Jeffrey Butzow owns the two businesses, along with Carvers Grand Rapids' Finest Meats and High Tide Soda - plus the new sub shop that is moving in! It's called Rudy's Subs and Soda and it will replace Pinktail Poke.

According to a social media post, Butzow has always wanted to open a specialty sub shop in the market. The space is now closed for renovations, plus training is underway along with menu development.

Rudy's is set to open by the end of February. The shop will serve "made-to-order signature and build-your-own subs, piled high with fresh veggies and high-quality meats and cheeses."
